Chicken Liver Adobo (Adobong Atay ng Manok)

Some may consider this an exotic food or weird. But this is such a delicious recipe that probably most Filipinos love. Chicken liver adobo or adobong atay ng manok is quite simple to prepare. No stress at all.

It’s not far from the usual and traditional adobo recipe. The combination of vinegar, soy sauce and bay leaves create a very distinct adobo taste. But it’s nutritional value should not be ignored.

Ingredients:

1/2 kl chicken liver
1 medium sized onion (chopped)
4 cloves of garlic (crashed)
3 laurel leaves
1/2 teaspoon paminta (pepper)
1/4 cup vinegar
1/4 cup fresh calamansi extract
1 teaspoon soy sauce
1 teaspoon Mama Sita’s oyster sauce
1 tablespoon brown sugar (or honey)
1 tablespoon cornstarch

Process:

1. In a bowl, combine liver, crashed garlic, pepper, salt and fresh calamansi extract. Set aside for about 20 minutes.

2. Heat the pan, add oil.
3. Saute remaining crashed garlic and chopped onion.
4. Pour in the marinated liver in the pan.
5. Add the  laurel leaves, vinegar, peppercorns, oyster sauce and brown sugar.
6. Cook for about 10 minutes.
7. Add in chopped chili.
8. Dissolve cornstarch in 1/4 cup of water. And pour in to create a thicker sauce.
9. Garnish with chopped green onions.

Serve and enjoy!

Tip: Pour in the vinegar and let it simmer for about 2 minutes before your stir. That is to avoid having the “raw vinegar” taste.
