Do you want to bring your regular fried chicken to the next level? Then you should try this Spicy Fried Chicken recipe. You’ll enjoy your fried chicken even more if you add some kick of spice on it. For this recipe, we will brine the chicken, coat them with cornstarch and toss in some spices.

Here’s how to cook Spicy Fried Chicken:


500g Chicken (thigh or leg part, whichever you like)
2 cups Cornstarch
1 tbsp. Chili Powder
1 tbsp. Paprika Powder
1 tsp. Garlic Powder
1 tsp. White Pepper
Cooking Oil (for deep frying)

for Brining:

1/2 cup Salt
2 tbsp. Sugar
1/2 inch sized Ginger (strips)
2 cups of Water

For extra spice:

1 tsp. Chili Powder
1 tsp. Paprika Powder
1 tsp. Garlic Powder


  1. In a bowl, combine in 1/2 cup of salt, a tablespoon of sugar, ginger and about 2 cups of water or enough to cover the chicken. Soak and brine the chicken for at least 4 hours.
  2. After brining, remove the chicken. Wash with water if you want to minimize its saltiness. Pat dry with a paper towel. Set them aside.
  3. In a separate bowl, combine in the cornstarch, chili powder, paprika powder, garlic powder, and white pepper powder. Season with salt and pepper. Combine.
  4. Coat the chicken properly with the spiced cornstarch.
  5. Heat a good amount of oil in a pan. Deep fry the chicken until golden brown and cooked.
  6. In a separate large bowl, mix in about a teaspoon of each – chili powder, paprika powder, and garlic powder. Toss the fried chicken to coat with the spice.

Note from Ren:

You can surely increase the measurement of the spices like the chili powder if you want an extra kick. Feel free to add more. Brining the chicken will make it juicy even after crispy fried.
