Corn Fritter (Ukoy na Mais)

Who doesn’t love sweetcorn? This Corn Fritter recipe is something that you can prepare for your family. It can be eaten during snacks or it can be a good appetizer too. It’s even very easy to prepare and doesn’t need too many ingredients to get it done. Locally in the country, we have a lot ukoy versions, and this is probably one of the best and the healthiest.

Here’s how to cook Corn Fritter (Ukoy na Mais):

Ingredients:

1 can 425 g Jolly Whole Corn Kernels
1 can 425 Jolly Cream Corn
1 cup grated cheddar cheese
1 egg
3/4 cups all purpose flour
2 cloves garlic (grated)
1 small sized white onions (grated)
1/4 cups chopped green onions
salt
pepper
Jolly Canola Oil

Dip:
2 tbsp. Mayonnaise
1/4 cup grated cheddar cheese
1 clove finely grated garlic
1 tsp. green onions (finely chopped)

Process:

1. Prepare a large bowl. Drain syrup from the can of whole corn kernels.

2. Combine in the bowl all the ingredients. Whole corn, cream corn, garlic, onion, green onions, cheese, egg, flour, salt and pepper.

3. Give it a good mixing.

4. In a non-stick frying pan. Put a small amount of Canola oil (for a healthier option).

Corn Fritter (Ukoy na Mais)

5. Using a spoon, scoop a good amount of mixture to form round fritters. Fry until brown on both sides.

Suggested Dip:

Combine in a bowl – mayonnaise, cheese, garlic and green onions.

Ready and Serve!
